Paddington Collins Cocktail
In Paddington station in central London is a bronze statue of a bear sitting on his suitcase, waiting. This bear is Paddington Bear, with his old bush hat, battered suitcase and a love of marmalade sandwiches who, has an endless capacity for getting into trouble but is always polite. As I used marmalade when creating this cocktail it seemed right to name it after two proper English icons – Paddington and the Tom Collins.
Ingredients
- 60ml Woodford Reserve
- 1 tsp English Breakfast Marmalade
- Juice of 1 Lemon
- Club Soda
Method
- Shake Woodford Reserve, Marmalade and Lemon Juice in a boston shaker hard with loads of ice
- Strain into an ice filled collins glass
- Top with soda
- Garnish with a sprig of mint
